Method
How it comes together

Rinse glutinous rice until water runs clear. Soak 1 hour, then steam over simmering water 20–25 minutes until tender and translucent.

While rice steams, warm coconut milk with sugar and salt in a small pan — do not boil. Stir until sugar dissolves.

Fold three-quarters of the warm coconut milk into the hot rice. Cover and let sit 15 minutes to absorb.

Slice mango cheeks off the pit; score and scoop or slice into planks.

Mound rice on plates. Nestle mango alongside, pour the reserved coconut milk over the top, and finish with toasted sesame seeds.
