How it comes together

    Sauté mushrooms hot and fast in olive oil until deeply browned. Set aside.

    In the same pan, soften shallot and garlic. Add rice, toast 1 minute.

    Deglaze with wine. Add warm broth a ladle at a time, stirring, until rice is creamy and al dente (about 20 minutes).
