How it comes together

    Whisk chia seeds, coconut milk, oat milk, maple, and vanilla in a bowl until fully combined.

    Wait 5 minutes, then whisk again to break up any chia clumps that formed.

    Cover and refrigerate at least 4 hours (or overnight) until spoonable and thick.

    Blend fresh mango with a squeeze of lime into a smooth puree.
