How it comes together

Pulse oats and dates in a food processor until sandy and clumping together.

Add almond butter, cocoa powder, chia seeds, vanilla, and salt. Process until a sticky dough forms.

If dough is too dry, add water 1 teaspoon at a time. If too wet, add a spoonful of oats.

Roll into 12 walnut-sized balls. Roll half in shredded coconut, leave the rest plain.

Chill 30 minutes to firm up. Store in the fridge up to 2 weeks.
