How it comes together

Drain and rinse chickpeas well. For extra creamy hummus, slip off the loose skins (optional but worth it).

In a food processor, blend tahini and lemon juice for 60 seconds until pale and fluffy.

Add chickpeas, garlic, cumin, salt, and ice water. Process 3–4 minutes, scraping down, until velvety.

Spoon into a wide bowl. Make a well in the center and pool olive oil and a dusting of paprika inside.

Arrange around it: warm pita, cucumber batons, olives, cherry tomatoes, and marinated peppers. Serve at room temperature.
