How it comes together

Char eggplants directly over a gas flame (or under a broiler) until skins blister and flesh collapses, about 15 minutes.

Cool, then scoop flesh from skins into a colander. Drain 10 minutes.

Mash with tahini, lemon, garlic, and salt. Do not blend — keep it rustic.

Spread on a plate. Drizzle olive oil, dust with smoked paprika, top with parsley. Serve with warm pita.
